    Had a big pick of the plants this morning. Habaneros, Rocotos, Jalapeños, long reds and one I have no idea of.

    On to smoke and dry out all day.

    Great pasta crab dish tonight. Sweat some shallots, garlic and chilli (not too hot, need to taste the crab). Season add white wine and reduce. Prepare the spaghetti. Add lime juice and white crab meat to the mix and then combine with the pasta. Finish with more lime juice and chopped parsley. Easy, quick and really good.

    I know that brown crab meat has more flavour but it just does not work in this dish. I don’t normally add Parmesan to seafood pasta but this is an exception.

    No pictures as I ate it too quickly. But it does look good too.

    Did you crack all the meat yourself or can you buy it ready to go over your way? Sounds super even if labour intensive.

    @Hooroo

    For this dish I’m happy to use decent shop bought crab. Definitely not tinned though. Over here you can get good vacuum packed stuff. Quick and easy is the story here.

    Excellent! I wish we could readily get that sort of thing.

    I make a similar dish with tuatuas here. Don't use white wine though, rocking it old school Italian.

    @Hooroo do you not have wet fish shops that would prepare crab and lobster?

    We do have those but I have only ever seen whole crab or Crayfish/lobster.

    @canefan A type of clam? That could work. Sort of like spaghetti vongole? If so I’ve tried cooking that many times with varying success. None of it anywhere near as good as in a back street restaurant in Venice. Incredibly cheap too.

    Population and demand. Wet fish shops have gone the way of local butchers.
    When our seafood commands high prices overseas the local market is also priced way above what people are willing to pay regularly, especially when fishing as a recreation is so big and you can just catch it yourself.

    @Hooroo Better ask them to sort it for you then mate. Lots of work for you otherwise. They will probably do it in a flash. Like shelling peas for the pros.

    I read this as using "Tuataras" which seemed an odd thing to admit to on the internet...

    Yes, tua tuas are like a large pipi.

    This is the method I have based mine on, the method starts at 15 minutes in but it is a great show anyway, food porn par excellence

    I buy from them all the time. The fish is fresh and well priced. The tua tuas are amazing, biggest I've ever seen
