As for the idea of having to deal with shells on a pizza. One of the advantages of pizza is that is fuss free.
Seriously, IMO that has to be one of the stupidest recipes I have ever read. It epitomises what is so wrong with a lot of modern cuisine. So called style over substance. The mussels are already cooked so WTF is the point of the shell?

hehe I agree, I wouldn't add shells and I suspect I'd find the sauce too creamy.
Still going to try a variant one day though -
@nostrildamus Id steam the mussels in a tomato base with some garlic and a little sake and use this as my pizza sauce and then just grate some lemon zest over the mussels and sprinkle with fresh thyme

Question for the collective Fern wisdom (such as it is)
I need to take a dessert away and serve it 24 hours after travelling. Currently thinking a couple fo cakes (feeding 10 people) - anyone have any good ideas for alternatives that are easy to transport and last well?

I watched a doco on Netflix or Disney+, they were in Naples and the local farmer was saying how proper San Marzano tomatoes only grow in a very small area, and that most of what the world gets aren't proper. The. Italian stuff still looks a whole lot brighter than our local stuff
yeah, their climate is so well suited to it. We seem to use greenhouses.
Was in Farro this morning buying low moisture mozarella for pizza... weirdly cheaper than normal stuff. Anyhoo, their cherry tomato selection (impressive though it is) was $40/kg. FFS, inflation is insane.
@Crucial used these ones - came up good with a bit of draining and some salt.
I like that brand. Just seems sweeter and tastier than the NZ shit

Just about every can of tomatoes sold in NZ is imported.
If you can’t read the label to see the origin….
You certainly get whet you pay for with canned tomatoes but you can find a compromise between price and quality easy enough. -

How about an olive oil lemon cake (robust enough to transport) maybe with some freeze dried raspberries through it. Can make a lemon syrup to soak with at the other end and serve with some shaken cream or thick yogurt.

I suspect that Watties is probably Asian (Thai), Delmaine is usually relabelled Italian (lower grade but not too low)

Buy 'normal' fresh mozza but leave it a week past it's 'use by' date (pop the lid or it might do so for you).
You'll find that it firms up a little, holds less moisture and develops a little flavour.Leave it in the liquid though?

Kids managed to drag themselves over Tongariro Crossing (exceptional walk, but the busiest track I have ever been on). Celebratory dinner to say 'well done' - their choice; Peach's. Respect little NZZP's.
Also, WTAF do some people think wandering up into alpine territory with activewear, sneakers and a water bottle. The mountains take no prisoners; I'm not surprised 57 people have died up there.
Edit: posting as I had the chicken 'n' waffles, and it was superb. Maple syrup, hot chicken and whipped chili butter ... Sensational, not my usual, but amazingly good.

Fucking this... growing up in the Naki, with regular trips up the maunga, I've always had the mantras "the weather up there can change in an instant" and "the mountain can kill you" driven home.
A few years ago, my mate suggested we get an AirBnB in Ohakune, and maybe do the Crossing. I looked up the weather, and said "yeah... that's not gonna happen". But - to my surprise, they pulled the trigger on the AirBnB - and pleasantly surprised, I thought "sweet - just a boozy weekend in Ohakune, maybe some squash... didn't think he and his missus would be up for that sort of thing, but I certainly am".
We all get there one evening... me on a bike, so only footwear is motorcycle boots or jandals, and very limited clothing. We get into the wine. And as it's getting late, they say "oh, should probably get an early night - doing the Crossing tomorrow."
Me: "Like fuck we are"- Dodgy weather forecast
- Me with nothing like appropriate footwear or anything else
- Them - not much better
Just... what the actual fuck? They were genuinely surprised and confused by my refusal.
Eventually - did some short walks around the place. And didn't die.
