    @canefan @voodoo what I am annoyed at is that I defrosted some venison and beef mince to make a nacho base for tomorrow and yet tonight I have made Macaroni Cheese (Beef tongue cooking overnight) and all I can think about is a bone-in lamb/goat curry!

    Plenty of time mate. I have a roasted chicken in the bbq tonight

    FABULOUS!!!! That is the next type of BBQ I am getting. Currently of WSM and a Weber Kettle but I drool when I see those porcelain type of BBQ's

    It's the akorn kamado. Poor man's ceramic but I like it. Lighter and easier to move and lift.

    Still a great bbq

    I have no complaints. I'd buy it again over a ceramic. Yes voodoo it does excellent duck. This is my peking duck take

    That makes me want wander down to Chinatown to grab a duck, roast pork, BBQ pork, soya chicken combo ... but I have food at home and trying to limit my 'takeaways' to once a week on the partial NSW lockdown.

    We used to regularly have mutton in the 80s, it took me a while to train myself to enjoy lamb in the late 80/90s.

    I currently have a massive beef tongue from the last beast we killed in the slow cooker done the same way as corned beef.

    Also seen a side of Dairy Goat (Lamb age/equiv) that is going to get cooked this weekend.

    Goats make great curry!

    TBH goat would be the last of the meats in a curry in order of preference for me.
    But I’ve had some awesome goat curries though.

    @Nepia You're going to pass on the Wuhan stir fried bat?

    Love Mutton - when you can get it. Pak'n'Save is good for goat and Mutton.

    Another retro option - Hogget - delicious combination of tenderness of lamb and full-flavour of mutton. Can be cooked hot and quick like lamb, or low and slow like Mutton . Haven't seen it in the retail market for years

    I don't know for sure but they seem to stretch the definition of lamb a wee bit which now overlaps into what used to be hogget.
    I seem to remember that buyers would mouth the lambs and any sign of the teeth coming through put them into hogget category. It was then best to chuck them back out in the paddock and put a little more size on them to maximise return as the per kg was less.
    I have a feeling they simply categorise by age now

    I walked past my local butcher the other night. He was furiously boning out carcasses - and making the meat into sausages and burgers for the freezer as far as I could see.

    Picked up a nice lamb shoulder to cook over the weekend - any suggestions? Thinking of a slow braise maybe, with a roast carrot salad of some description (have an excess of carrots).

    Last night made the recipe that I believe has the greatest disparity between effort and 'wow' factor. Salmon poached in a soy broth. Any moron could do this, almost impossible to screw up, yet it tastes amazing and people think you are a genius.

    Pretty healthy too with some rice and asian greens on the side. I recommend.

    Fellas, if anyone has a favorite recipe, send it through. Lockdown inspiration needed, lots of time on my hands!

    Must be able to be cooked in a conventional kitchen or on a webber bbq. Kitchen has oven, Le Crueset dutch oven, electric slow cooker.

    What have you guys got?

    A small shoulder of lamb in Dutch oven. Add stone in green olives (pressed/squeezed) a lime cut in half, hard herbs like thyme or rosemary a couple of whole chillies chopped in half and a cup of white wine or Rose.

    Cover and cook low and slow

    i have a really basic one, where you rub the shoulder in oil, season, and load up with garlic and rosemary. Cover it in foil, stick it in the oven on 150 for 4 hours. pull it out, rest it, serve. Never fails to taste good.

    If you want to fancy it up a bit, rub it in a mix of yoghurt, cumin, chilli, coriander seeds, paprika, ginger and garlic. Stick in the fridge for 4 hours. then cook exactly as above.

    I love lamb shoulder
